Steak and Sweet Potato Fries

Tonight, Bryan is working a night shift, so I have major plans of catching up on Top Chef (haven't watched in 3 weeks) and blogging! Here we go!


Last week, before going to Minneapolis for Easter, the weather was really nice and we thought it would be great grilling weather and we both immediately wanted a nice juicy steak. Bryan and I also decided to experiment with some sweet potatoes. We usually make Cajun mashed sweet potatoes, but this time we thought we’d change it up and make sweet potato fries! I blog stalked and Googled a few recipes and after about 10 minutes of searching, I created our own seasoning recipe and I was super excited!

First, peel the sweet potatoes and cut them into fry like strips – thick or thin, whatever you like. I prefer a little thicker for homemade fries. Then, place them in a medium sized bowl and drizzle with olive oil. Season with salt, pepper, garlic powder, chili powder, Italian seasoning and Cajun seasoning and blend until all the fries are seasoned. While the olive oil is necessary to get the seasoning to stick to the fries, I read that it helps to sprinkle in some corn starch to help absorb some of the oil so that your fries aren’t too greasy. This trick worked like a charm!

Spread them evenly on a baking sheet and bake at 425 degrees for about 8 minutes. Turn them over on the baking sheet and add more seasoning if you like and bake for another 8 minutes. As soon as they are crunchy on the outside and slightly browned, they are ready!

We enjoyed these babies dipped in the homemade mayo sauce that I made previously to go with the fried avocado strips and it was delicious! This dish would be perfect for a side dish of a quick weeknight dinner or even a BBQ because they are definitely going to be a crowd pleaser and they are easy to make in bulk. I’ll definitely be making them again in the near future because they were so amazing!
